Elizabeth Caruthers - Registered Dietition
Elizabeth Caruthers, RD, CDN is a registered dietitian with 15 years of practice in her field. She has worked with a variety of clients, providing a spectrum of nutritional care: from prenatal wellness to support in life-threatening acute illness. She received her BS in nutrition and dietetics from the University of Maryland in 1995, then completed her year-long internship at the University of Maryland Medical Center, an innovative teaching hospital. Over the next decade she provided medical nutrition therapy to patients at Bon Secours Hospital in Baltimore, Maryland, as well as Yale New Haven Hospital and Saint Raphael's Dialysis Center in New Haven Connecticut.
Elizabeth complements her foundation in Western science with meditation practice, which helps her stay present and remain open to each client. Through the guidance of her teacher, Lama Padma Karma Rinpoche, she continues to explore the extraordinary potential of mindfulness to heal and provide valuable information about the body's unique needs for nourishment.
For the past six years Elizabeth has been providing nutrition therapy and wellness education to patients of the Fair Haven Community Health Center in New Haven, Connecticut. In 2007 she opened her practice to private clients. Elizabeth now offers nutrition consultation at Windhorse International to riders and others who wish to enhance their athletic performance, achieve a healthy weight, heal an injury or illness, or simply enhance overall well being. Nutritional needs are unique to each person, and adjustments in food choices, timing of meals, and mindfulness while eating can have a tremendous effect on the body and mind.
